Just a Thought, what about trying stew meat in place of the ground chuck ???  I&#039;m looking for an actual italian meat sauce recipe that uses stew meat in place of hamburger beef.. I got the recipe many, many years ago from an actual italian husband and wife. I cannot find it anymore, amongst all my moves now living in Edmonton AB Canada. This recipe I had, is a least 33 yrs old.. I&#039;ll try your recipe with stew meat.....and hopefully it will be the very close.....

You make me want to get in my kitchen right now and make up some more sauce.  I make a sauce that is very similar, but I have never tried nutmeg in there.  I may do that now.</description>

I have a suggetion you might want to try, too.  Along with sauteeing the ingredients you mention above, I add the chopped tomatoes to the  the olive oil, and cook them for about five minutes, before proceeding with the sauce.  This gives a stronger tomato taste to the finished sauce.
