I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Morning Glory Coffee Cake

Morning Glory Coffee Cake

I’ve always appreciated Morning Glory Muffins. They are a great morning treat, packed full of delicious ingredients that at least make you feel like you are starting the day right. I’ve made many versions over the years – it used to be a standard treat I took to new moms. It’s such a cheerful and […]

Apple Ginger Upside Down Cake

Apple Ginger Upside Down Cake

You may notice a little theme this month, though it wasn’t actually by design. As autumn rolls around, I start cooking with (and eating) a lot of apples. In season, locally-grown apples are a wonder, on par with eating seasonal, local strawberries, instead of the chemically ripened fruit flown in from miles and miles […]

Chicken Apple Bisque

Chicken Apple Bisque

French bistro – that’s what this soup says to me.  I have no idea if this is anyway something you would find on an authentic bistro menu, but the combination of classic vegetables and Calvados brandy just seems to me like something that would be served in a simple bistro, in a big bowl, […]

Sweet Potato and Apple Soup

Apple Bacon Kuchen

As October begins, I start to think about the farmers market season wrapping up.  I’ve got a few weeks left, when I can buy beautiful apples, as well as pumpkins, winter squash, pears and greens, but I know things are moving into fall and winter. Smaller versions of the market continue, which is a […]

Maple Mustard Chicken Salad

Back in the summer, I boasted to you that I am a chicken salad savant and that I have versions for every imaginable occasion and all seasons.  This is my favorite fall chicken salad, full of the crispy, crunchy, bold flavors of the season.  And yes, chicken salad is perfect in fall – it’s […]

Pork, Sage and Apple Burgers

Familiar is good.  A good, juicy burger with melty cheese on a soft bun.  Maybe some fries on the side.  But different is good too.  And this pork, sage and apple burger fits that bill perfectly.  Juicy pork kept moist with tart green apples and tangy onions – a brilliant combination that will make […]
