I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Apple Gruyere Spread

Apple and Gruyere Spread

Here’s a fun fall snack that features beautiful green apples and nutty gruyere cheese. A great spread on hearty wheat crackers, this also makes a wonderful sandwich filling that’s particularly suited to rye bread.  In fact, those little square slices of party rye are great for an appetizer or little tea sandwiches.

This is [...]

Spiced Cider Pound Cake

Growing up in the South, fall was always just a short little respite from the heat, before the dull, dark cold winter.   The leaves turn quickly and fall fast. The weather is only really sweater-worthy for a few days.  The mass-marketed Halloween costumes were always hideously hot, and eating outside on Thanksgiving is usually [...]

Caramel Apple Cookies

The flavor of caramel covered apples is amazing.  Eating a caramel apple, not so much.  The caramel-to-apple ration in my opinion, tends to be too low.  I can’t abide those pre-made wrap around sheets, and making a good caramel is a bit of work.  And in the end, the caramel tends to slide off [...]

Pasta with Gorgonzola, Apples and Walnuts

When I travel, one of my greatest joys is sampling as much of the local food as possible.  But on long trips, even I get a little weary.  Sometimes I crave more familiar flavors, sometimes I am just too tired to search out a specialty restaurant and just want what’s close.  And sometimes, this [...]

Pork Chops with Maple Calvados Butter Sauce

This recipe includes some of my favorite fall flavors – maple, pork, and Calvados apple brandy. It was born from the desire to combine these flavors in the most delicious way.  It’s perfect for autumn nights at home, but is an equally elegant dish for friends.  The sauce is rich and silky and complements [...]

Cinnamon Apple Salad

Easy and good. Maybe two of the best words ever for busy cooks. This is a great little recipe for a simple, crispy salad that highlights autumn’s goodness.  I make this for myself throughout the season.  I love it beside a peanut butter sandwich, but I have also put it in a pita with [...]

Apple Pie Bars

Apple Pie Bars

Once upon a time there was a beautiful apple tree. When I was maybe 10, my dad took me to the plant nursery and let me choose whatever kind of tree I wanted to plant in the backyard, to replace one that had died.   My family had just enjoyed some magnificent apples, bright red with little [...]
