I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Apple Fennel Slaw with Curried Dressing

Apple Fennel Slaw with Curried Dressing

I generally think of coleslaw as a summer dish. A staple of picnics, cook-outs and barbecues. But as I continue to enjoy in-season local apples, I remembered many recipes I’ve read over the years that use apples in slaw. So I decided to work up my own version of a fall slaw, with a […]

Roasted Pork and Sweet Potatoes with Hard Cider Cream Sauce

Roasted Pork and Sweet Potatoes with Hard CIder Cream Sauce

October is that transitional time of year, the leaves are beginning to fall, the weather is cooling and I’ve pulled the sweaters out of storage. I’m ready to cover up the grill and move onto to hearty roasts and vegetables, but I’m not quite ready for thick soups and heavy stews. So a perfect […]

Indian Spiced Butternut Soup in the Slow Cooker

Indian Spiced Butternut Soup in the Slow Cooker

It’s a cold, wintry day. I’m on the sofa with a good book and a soft blanket while my house fills with the smell of warm spices. I know that I’ll have a delicious bowl of rich, flavorful soup for dinner. This is my favorite winter scenario and this soup is a favorite way […]

Maple Apple Biscuits with Whipped Maple Butter

Maple Apple Biscuits with Whipped Maple Butter

I’ve been focusing this month on simple comfort foods; food to share with family and friends that are simple and delicious. And nothing is more comforting to me than a homemade biscuit. So in the fall, I like to pair up the best of the season’s apples with a little sweet maple syrup to […]

Apple Gruyere Spread

Apple and Gruyere Spread

Here’s a fun fall snack that features beautiful green apples and nutty gruyere cheese. A great spread on hearty wheat crackers, this also makes a wonderful sandwich filling that’s particularly suited to rye bread.  In fact, those little square slices of party rye are great for an appetizer or little tea sandwiches.

This is […]

Spiced Cider Pound Cake

Growing up in the South, fall was always just a short little respite from the heat, before the dull, dark cold winter.   The leaves turn quickly and fall fast. The weather is only really sweater-worthy for a few days.  The mass-marketed Halloween costumes were always hideously hot, and eating outside on Thanksgiving is usually […]

Caramel Apple Cookies

The flavor of caramel covered apples is amazing.  Eating a caramel apple, not so much.  The caramel-to-apple ration in my opinion, tends to be too low.  I can’t abide those pre-made wrap around sheets, and making a good caramel is a bit of work.  And in the end, the caramel tends to slide off […]

Pasta with Gorgonzola, Apples and Walnuts

When I travel, one of my greatest joys is sampling as much of the local food as possible.  But on long trips, even I get a little weary.  Sometimes I crave more familiar flavors, sometimes I am just too tired to search out a specialty restaurant and just want what’s close.  And sometimes, this […]

Pork Chops with Maple Calvados Butter Sauce

This recipe includes some of my favorite fall flavors – maple, pork, and Calvados apple brandy. It was born from the desire to combine these flavors in the most delicious way.  It’s perfect for autumn nights at home, but is an equally elegant dish for friends.  The sauce is rich and silky and complements […]
