Southern Snacks Cookbook

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Banana Brown Butter Bars

I’ll be completely honest here. I like banana bread, and this Bananas Foster Pound Cake is a champion. I like banana in cookies too. But I don’t much like a banana. Not straight up, right out of the peel. I think it is a texture thing. So I don’t really have bananas hanging around my […]

Glazed Double Almond Bars

I’m returning to a classic here. These are neither hip or new or with some special twist, they are just a recipe I have been making for years and return to when I need a little comfort. I love the old-fashioned taste of almond paste. I don’t now why exactly I say old fashioned, there […]

Rhubarb Ginger Chess Bars

Rhubarb reminds me of England. I didn’t really eat rhubarb as a child – it doesn’t grow much in the South – and the only thing I really ever heard about it was my mother lamenting a horrible dessert served at her boarding school. So I discovered rhubarb when I started spending time in England, […]

Lemon Lovely Bars

The story I was going to write here was about the joys of bright citrus in the gray and gloomy weather of winter. A nice tale about citrus fruits being the sunshine in season during the bleak midwinter. But we’ve had a spring like February with 75 degree days this year and lovely sunny […]

Double Caramel Bars

Double Caramel Brownies

Sweet and rich and decadent – and a wonderful treat in the midst of the dark winter months. These caramel frosted brown sugar bars are a favorite of mine. I tend toward caramel. I love chocolate, of course, but if given the choice I’d choose caramel. So these are a nice deviation from a […]

Eggnog Bars

Eggnog Bars

I can’t make it through the holiday season without the flavor of eggnog. I cook and bake with eggnog in all sorts of ways, from Overnight Eggnog French Toast Caserole to Eggnog Pie and I fall for all the eggnog seasonal flavors on the grocery shelves. That perfect holiday richness with the whiff of […]

King Cake Bars

I have never set myself the task of making a real King Cake, as I figure there are enough people who do that already. My brother used to send me delicious King Cakes from a bakery in New Orleans when I was in college. Those cakes were moist and tender with a cream cheese […]

Orange Slice Candy Squares

My grandmother lived in a small town in Arkansas, the town where my father grew up. She died when I was six, so my memories of her are somewhat limited. But those I do have are vivid to me, though undoubtedly burnished through the patina of time. I particularly remember visiting her with my […]
