I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Lady Pea, Corn and Tomato Salad with Basil Vinaigrette

Lady Pea, Corn and Tomato Salad with Basil Vinaigrette

I adore lady peas. They are as lovely as their sweet name suggests. These tiny little gems are creamy and pack a flavor punch for their diminutive size. And during the summer, when the lady peas are abundant, I use them in whatever way I can, braised in butter or in a beautiful Sunshine […]

Parmigiano and Basil Baked Corn

Fresh summer corn is one of my favorite things on the planet. I buy it in such quantities at the farmers market it’s actually a little insane. Though a fresh cob lightly steamed dripping with butter is a perfect summer treat, I also love corn baked in a creamy casserole, and it is an easy […]

Italian Summer Cherry Tomato Tart

I’m recently back from a month in Italy, exploring the art and history and architecture, but let’s be honest, mostly exploring the food. Because that is what I love the most. The recipes, techniques and ideas I learned are working around in my head still, but I am sure they will come out here […]

Sugar Cake with Blueberry Basil Compote

Sugar Cake with Blueberry Basil Compote

I was first drawn to this recipe, because, well, who could resist something called sugar cake. It reminds me of the great classic song “Tea for Two”, the Ella Fitzgerald version is on my kitchen playlist. “Day will break and I will wake, and start to bake a sugar cake, for you to take […]

Watermelon with Sweet Pesto

Watermelon with Sweet Pesto

Watermelon and mint are a classic summer pairing.  I love it in a sorbet or a sweet tea drink.  But basil is a great match with melon as well, so I worked up this sweet pesto, with the herby, grassiness of basil and a little undernote of mint.  It really is a […]

Panzanella Bake

Panzanella Bake

Panzanella a genius example of creative leftover usage. It’s a classic Tuscan salad of stale bread and over-ripe tomatoes, tossed with basil and moistened with olive oil and vinegar.  But the beautiful colors and bright fresh flavors make it elegantly simple, the kind of food you imagine yourself throwing together if you […]

Tomato, Brie and Herb Pasta

I’ve been making this dish for years, decades if I’m honest. I really thought it was my own unique creation, and I patted myself on the back for its genius every time I made it.  It’s been my date night dinner, my decadent solo treat and my impressive meal for friends.  I made it in my […]

Pasta Butter Balls

One lazy evening, on a desperate-for-dinner freezer scrounge, I came across a half used log of frozen herbed butter – a beurre composée if you will.  I like to make these with the summer glut of herbs and roll them into waxed paper wrapped logs.  This butter has myriad uses, but I mostly use […]

Peaches Poached with Basil

Peaches are to me the great herald that summer has well and truly begun. Just when you start to feel the weather change from warm to downright hot and the air from breezy to thick with humidity, peaches make their appearance at markets and roadside stands.  At summer camp, you could always […]

Caprese Tart

A few years ago, in the hot, hot summer, we had a big storm that knocked out power for over two weeks.  They say it was a wind storm, but we all called it Hurricane Elvis.  As it was summer, many people were away on vacation, had vacations planned, or just left town during […]
