I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Blueberry Vanilla Buttermilk Cake

Blueberry Vanilla Buttermilk Cake

Simple ingredients of the best quality produce the most amazing results.  It always holds true.  Fresh blueberries straight from the farmers’ market, real vanilla and creamy buttermilk, the best you can find.  I mulled over ways to dress up the cake, make it more exotic or unusual, but in the end, I decided there […]

Almond Amaretto Cherry Muffins

Almond Amaretto Cherry Muffins

A basket of nice, sweet muffins is a wonderful addition to a breakfast or brunch table, and these almond-y bites are made really moist with the addition of almond paste. A  bite-sized version of my Simple Moist Almond Cake. Nice tart cherry is a great pairing with almond – if you use big Bings, […]

Leek and Brie Bread Pudding

Leek and Brie Bread Pudding

Spring is the perfect time for brunch.  With Easter starting things off, there always seems to be an explosion of daytime events.  Graduations and weddings and all the celebrations that go with them.  And I love a good family brunch.  You can wear a nice dress, but don’t have to worry about high heels […]

Country Ham Biscuit Bites with Cheese

Country Ham Biscuit Bites with Cheese

My love for biscuits is well documented (13 recipes on the site at last count), and my love of country ham equally evident when you peruse my recipes.  I have always enjoyed a warm, buttery biscuit with a slice of salty country ham tucked inside, so the next logical step seemed to be incorporating […]

Persimmon Bread

Persimmons are the brightest spot in the barren winter fruit scape.  Sure, citrus is there, but I miss the reds, pinks, peach, blues, plums, purples and greens of summer bounty.  But then there are these bright beauties, orange and smooth and shiny, with their frilly green caps.  I have a tendency to overbuy, because […]

Merry Morning Muffins with Eggnog Butter (Overnight Gingerbread and Cranberry Muffins)

Everyone is up earlier than any other day of the year to see what’s under the tree.  Wrapping paper ripping, bows flying, boxes everywhere.  And somewhere in there, folks get hungry.  Just a nibble before the big celebration.  Something special, but simple.  There’s just too much going on to whip up a gourmet feast.  […]

Oatmeal Get Up and Go Muffins

When the reality of the new school year and the end of summer hit, having a quick, portable breakfast on hand can be a serious boon.  And these muffins fit the bill.  I often find muffins labeled “healthy” to be leaden gut bombs, but these are light and tender, thanks to the magic of […]

Zucchini Lemon Muffin Gems

Classic zucchini bread is a summer staple for anyone who has a garden or frequents the farmers market.  I always seem to have one extra zucchini lying around.  But I find the typical spiced zucchini bread recipe, though delicious, a little heavy in summer, so I adapted a classic English lemon drizzle bread recipe […]

Fresh Corn Grits

I was standing in my kitchen, on a Saturday after my farmers market run, putting everything in its proper place while I made my plan of attack for the day.  Stacked up on the counter were a dozen ears of corn, destined to be blanched, stripped and frozen in little baggies.  Next to that […]

Goat Cheese Pancakes with Blackberry Syrup

This is recipe truly born of over eagerness at the farmers market.  In the early months of summer I find that my eyes are definitely bigger than my stomach, my desire for all that produce greater than time reasonably allows.  I buy in vast quantities – I want everything and lots of it.  I […]
