I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Waffles and Hash (Chicken Hash with Cider Gravy)

This is, I suppose, a treasured family recipe.  For my entire life, both my mother and my aunt often waxed poetic about the favored meal of their childhood.  Waffles and Hash.  We were regaled at family meals about the tradition of having Waffles and Hash for Sunday night dinner.  Any mention of family food traditions [...]

Chocolate Biscuits

I love biscuits in all forms, and have myself developed many permutations, from fresh corn, to blueberry, to pimento cheese.  But with the sweetheart holiday coming up, I thought I’d try my hand at a rich, chocolate version. Bake up a batch of these babies for someone special and you’ll make your way onto their [...]

Apple Bacon Kuchen

As October begins, I start to think about the farmers market season wrapping up.  I’ve got a few weeks left, when I can buy beautiful apples, as well as pumpkins, winter squash, pears and greens, but I know things are moving into fall and winter. Smaller versions of the market continue, which is a boon, [...]

Peach and Ginger Muffins

The combination of peaches and ginger is a favorite of mine, and in these muffins, it really shines.  These muffins are not too sweet, but burst with flavor and texture.  Fresh, in-season peaches are such a summer treat, make the most of the season. Use real ginger ale for this – the kind you find [...]

Savory Sausage Breakfast Cake

I spend the vast majority of my time creating recipes.  Thinking about ideas, how to make them work, what I want to cook, what I want to eat, how to share the idea. And people often ask me about my process.  Sometimes ideas pop into my head fully formed, but more often, like this recipe, [...]

Rhubarb Crumb Cake

Every time I buy rhubarb at the grocery, at any store, the cashier has to ask me what it is and then struggles to find it on the produce code chart.  Is it a vegetable or a fruit (technically a vegetable, by the way)? Once a cashier suggested I memorize the code to make it [...]

Southern Buttermilk Biscuits- A Primer

Heaven is a Biscuit I love biscuits.  Love them.  I could eat a whole batch at one sitting, even without butter or jam or gravy.  I say I could, because believe it or not I do possess the restraint not to. And I should probably clarify, I love good buttermilk biscuits.  Sure, I have been [...]

Overnight Eggnog French Toast Casserole

Overnight Eggnog French Toast

I have a thing for eggnog.  I think it is my favorite holiday flavor.  I buy all the eggnog flavored holiday gimmicks – candy, yogurt, ice cream, coffee creamer (and I don’t even drink coffee).  I love a good glass of eggnog, but I don’t really drink it as much as I bake with it. [...]
