Southern Snacks Cookbook

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Nectarine and Almond Coffee Cake with Whipped Honey Yogurt

I’ll be honest, the first time I set out to make this cake, my idea was to use purple plums, which I had seen at the farmers market the previous week. At that Saturdays market though, there were no plums, but I had promised to make a fruity coffee cake for a girls’ brunch […]

Fresh Strawberry Biscuits with Chocolate Gravy

I have combined a lot of words I like here. Strawberries and biscuits and chocolate. I’m not sure I can do any better for a strawberry season brunch treat. I think strawberries and chocolate are a timeless pairing, though usually found in desserts and candies. Of course, I’m not saying you can’t eat these […]

Asparagus with Creamy Brie Dressing

Fresh spring asparagus I such a lovely thing to serve at an Easter brunch, or any spring occasion really. It can easily be made ahead, it’s hugely adaptable, plus, it always looks so pretty on the table. I have several lovely oblong dishes that seem made for asparagus, and I love asparagus serving tongs. […]

Buttermilk Grits with Bacon Gravy

Buttermilk Grits with Bacon Gravy

I have combined in this recipe three of my favorite Southern ingredients. Flavor-packed, stone ground corn grits, creamy, sharp buttermilk and, of course, bacon. The trifecta of flavor elevates the simplicity of each ingredient to a new, sophisticated level. Buttermilk adds an elusive edge of tang and the smoky bacon plays off it beautifully. Another […]

Carrot Dill Biscuits with Cream Cheese Butter

Carrot and cream cheese is a classic pairing that always makes an appearance around Easter. But the combination is usually in sweet recipes. I love a moist carrot cake with rich cream cheese icing, or a carrot cookie with a drizzle of cream cheese glaze. But I decided to turn that combo around, creating […]

Roasted Asparagus Mimosa

Roasted Asparagus Mimosa

The true culinary harbinger of Spring – asparagus. When the tender stems push their way up through the dirt and out to the market, I really feel like we can start celebrating spring. Asparagus on the plate and buttercups in a vase mean soft days and gentle nights before the heat of summer truly […]

Monte Cristo Casserole

Monte Cristo Casserole

I started a tradition when my nieces (and later my nephew) were very young. Every year at Christmas, I took them to lunch at a restaurant and then we went shopping for toys and food for all the folks who didn’t have as much at Christmas as we always have. When the girls were […]

Christmas Fruit Salad

Christmas Fruit Salad

Christmas is, for me, a time of indulgence. I gorge myself on cookies and candies and appetizers and heavy meals. It is one of the special treats of the season, and motivation for a new year’s resolution. I have been known to serve Christmas breakfast buffets featuring cheese grits, cheese and sausage casserole, bacon, […]

Homemade Southern Hash Brown Casserole

Homemade Southern Hashbrown Casserole

I rather hope this recipe becomes an internet sensation. Because I know I have searched and searched through websites, engines, magazines and books looking for an old-fashioned style hash brown casserole that doesn’t use canned soup. I cannot abide canned soup, so I finally took it upon myself to come up with a can-free […]

Creamy Scrambled Egg Casserole

Creamy Scrambled Egg Casserole

I have, for many years, been searching and experimenting with recipes for a make -ahead breakfast casserole that is all egg. The classic breakfast casserole around here is sausage, cheese and bread bound with an egg and milk custard, and I have made many variations of that. But I wanted something that didn’t include […]
