I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Parmigiano and Basil Baked Corn

Fresh summer corn is one of my favorite things on the planet. I buy it in such quantities at the farmers market it’s actually a little insane. Though a fresh cob lightly steamed dripping with butter is a perfect summer treat, I also love corn baked in a creamy casserole, and it is an easy […]

Celery Seed Chicken

Celery Seed Chicken

I spend the vast majority of my time working out recipes – devising, experimenting, cooking, refining, writing. And I have a lot of failures, or at least misfires. I have as many kitchen disasters as anyone, if fact, probably more because I cook more than many. But every once in awhile, a kitchen hiccup becomes […]

Monte Cristo Casserole

Monte Cristo Casserole

Creamy Scrambled Egg Casserole

Creamy Scrambled Egg Casserole

Pastitsio (Greek Lamb Casserole)

Pastitsio

This is an extra post this week, because to be honest, I am quite pleased with myself.  My recipe for Pastitsio is a finalist in the wonderful website Food52 contest for Best Baked Pasta dish.  When I saw the contest theme, I immediately remembered how much I enjoy this dish.  This Greek […]

Overnight Eggnog French Toast Casserole

Overnight Eggnog French Toast

I have a thing for eggnog.  I think it is my favorite holiday flavor.  I buy all the eggnog flavored holiday gimmicks – candy, yogurt, ice cream, coffee creamer (and I don’t even drink coffee).  I love a good glass of eggnog, but I don’t really drink it as much as I […]
