I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Chocolate Covered Cherry Baked Pudding

Chocolate Covered Cherry Baked Pudding

At the beginning of my path to being a serious cook, when I was a teenager, I used to make a Black Forest Cake, which seemed to me like the most sophisticated type of dessert. It was a chocolate layer cake with cherry filling and a rich frosting. I’d seen lots of pictures in [...]

Red Velvet Pound Cake

Red Velvet Pound Cake

Christmas is the perfect time for red velvet.  It’s the festive color of the season, and it is just so fun.  I’ve made Red Velvet Polka Dot Cookies and Red Velvet Surprise Cupcakes, and experiment with even more ideas.  But this may be the most practical.  Pound Cake is such a holiday staple – [...]

Milky Way Crazy Candy Bar Cake

Milky Way Crazy Candy Bar Cake

Milky Way Cake is a classic recipe and there are versions of it all over community cookbooks and the Internet.  Some are layer cakes with marshmallow frosting; some are sheet cakes with boiled fudge icing.  But I like this simple Bundt version.  This is a sweet cake, with a lovely caramel undernote [...]

Peanut Butter and Chocolate Truffle Tart

Peanut Butter and Chocolate Truffle Tart

Peanut butter and chocolate are one of nature’s great flavor combinations.  But part of the great parental anomalies of my childhood.  My Dad doesn’t like it. That was, and still is, difficult for me to understand.  It was as much a mystery to me as all those great questions that were answered with “because [...]

Red Velvet Surprise Cupcakes

Last year, I posted a recipe for Peppermint Black Bottom Cupcakes, a nifty seasonal twist on a classic recipe and family favorite.  Well, as I started to think about Christmas treats for this season, I decided to take that classic recipe and try another twist – fun, rich, colorful red velvet.  Red Velvet Black [...]

Halloween Hot Chocolate (Liquid Candy)

I see lots of recipe for using up leftover Halloween candy.  I’m not sure I see the point, as just eating it straight is generally fine with me.  Mind you, not in one sitting, but over time, stashed in drawers and cabinets.  But I do want to make my contribution with this creamy, rich [...]

Chocolate Biscuits

I love biscuits in all forms, and have myself developed many permutations, from fresh corn, to blueberry, to pimento cheese.  But with the sweetheart holiday coming up, I thought I’d try my hand at a rich, chocolate version. Bake up a batch of these babies for someone special and you’ll make your way onto [...]

Milk Punch and Cookies

Milk Punch has roots in New Orleans, with a history as a hair-of-the-dog remedy.   In fact, my best milk punch memory is enjoying a bit too much at a wonderful wedding brunch in New Orleans.  And now, that bride makes milk punch for a Christmas party every year.  I have to admit though, I [...]

Peppermint Black Bottom Cupcakes

Last year, for the big family Christmas Eve celebration, I was tasked with providing a dessert.  It’s a little tough to figure out the right dessert for a great big gathering, one that serves enough and pleases everyone.  In the past I’ve made cakes and pies, but you always need to make [...]

Hot Chocolate Pops

I was in a very fancy grocery store and saw a lovely, beautifully wrapped box of hot chocolate-on-a-stick.  My first thought was “I can do that.”  And those babies with their cellophane and ribbon and fancy label were selling for $10 apiece.  Yea, I can do much better than that.

These pops are basically [...]
