The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Pineapple Ginger Fruit Dip

I am forever looking for interesting ways to serve strawberries on a spring buffet. Their natural beauty brightens up any table, and I always want to make the most of their short growing season. Not that there is anything wrong with eating strawberries on their own, but it’s nice to have a little delicious extra […]

Roasted Onion Dip

Onion dip is a perennial favorite. From my high school days of powdered soup mix and sour cream or the convenience store tubs that found their way into the college dorm fridge, I have always had a soft spot for the creamy, savory classic – particularly with salty ridged chips. I’ve grown up though, […]

Liptauer

Liptauer

Many years ago, as a kid, I saw a recipe and photo for Liptauer in a cookbook or magazine, and I remember that it looked impossibly elegant and sounded so exotic and sophisticated to me. I didn’t understand all the ingredients –capers and caraway sounded foreign and out of reach. The picture showed a fancy […]

Carrot Dill Biscuits with Cream Cheese Butter

Carrot and cream cheese is a classic pairing that always makes an appearance around Easter. But the combination is usually in sweet recipes. I love a moist carrot cake with rich cream cheese icing, or a carrot cookie with a drizzle of cream cheese glaze. But I decided to turn that combo around, creating […]

Apple Gruyere Spread

Apple and Gruyere Spread

Here’s a fun fall snack that features beautiful green apples and nutty gruyere cheese. A great spread on hearty wheat crackers, this also makes a wonderful sandwich filling that’s particularly suited to rye bread. In fact, those little square slices of party rye are great for an appetizer or little tea sandwiches.

This is […]

Red Velvet Surprise Cupcakes

Last year, I posted a recipe for Peppermint Black Bottom Cupcakes, a nifty seasonal twist on a classic recipe and family favorite. Well, as I started to think about Christmas treats for this season, I decided to take that classic recipe and try another twist – fun, rich, colorful red velvet. Red Velvet Black […]

Strawberry and Cream Cookies

The spring obsession with strawberries continues. As the season settles in, I look for other ways to enjoy the little red jewels, as I have almost eaten my fill of them plain from the bowl I keep in the fridge, filled every week at the famers market. And so I turn to baking to […]

King Cake Bars

I have never set myself the task of making a real King Cake, as I figure there are enough people who do that already. My brother used to send me delicious King Cakes from a bakery in New Orleans when I was in college. Those cakes were moist and tender with a cream cheese […]

Peppermint Black Bottom Cupcakes

Last year, for the big family Christmas Eve celebration, I was tasked with providing a dessert. It’s a little tough to figure out the right dessert for a great big gathering, one that serves enough and pleases everyone. In the past I’ve made cakes and pies, but you always need to make […]

Cream Cheese Wafer Biscuits

I have stumbled across this recipe in many community cookbooks over the years, and after seeing it so many times, I just had to try it to see if it’s for real. It’s so easy, I had a suspicion it was too good to be true. But, lo and behold, it works.
