Southern Snacks

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Greek Lemon and Rice Soup

Greek Lemon Rice Soup

My area is sorely lacking in Greek restaurants, but we do have a wonderful Greek Festival every year, and they have a lovely roasted chicken with lemon and rosemary on the menu that is a once a year treat. But about a year ago, a restaurant opened up (you may have one in your […]

Buttery Lemon Dill Stuffed Eggs

Buttery Lemon Dill Stuffed Eggs

I do love a good stuffed egg. They are always stuffed eggs, never devilled eggs in my family. I do, however, like them simple. I push the boat out a little with my fabulous Pimento Cheese Stuffed Eggs, but I really want the primary flavor to be egg. Highlighted by fresh herbs, a little […]

Artichoke, Goat Cheese and Lemon Spread

Artichoke, Goat Cheese and Lemon Spread

Creamy artichoke dip has long been a staple a parties and gatherings. Lots of mayonnaise and marinated artichoke hearts and gooey cheese. It has never been a favorite of mine, because it is so rich and always tastes more of mayonnaise than anything else. I set out to create a dish everyone […]

Lemon Rosemary Cocktail Wafers

Lemon Rosemary Cocktail Wafers

The summer herb garden has been rampaging this year, and I have a rosemary bush that won’t quit. I’ll have plenty for use when the pears come in to make Rosemary Pear Butter and I’ll make a couple of dishes of Chicken, Prosciutto and Rosemary Lasagna. But I have also been using it in […]

Lavish Lemon Cake

Lavish Lemon Cake

When you are the cook in the family, the special task of creating family celebration meals falls to you. It is an honor and a privilege and one I take very seriously. I always pay attention to what my family members like (and don’t) and my favorite kitchen task is devising and creating meals […]

Citrus Shrimp Linguine

It’s winter. Generally, it’s cold and grey, though here in Memphis, the months are punctuated with weirdly frustrating days of seventy degree weather. I love winter food, but I have souped and stewed and braised myself silly and I’m ready for something lighter and fresher. This recipe started as just […]

Sweet Tea Cookies

The flavor of sweet tea is the flavor of the South. With the wafting aroma of mint and the tang of lemon, with that tooth-achingly sweet depth. I love to transform those flavors into many forms, from bourbon punches to sorbet to these cookies. They are redolent with those iconic flavors. The texture of […]

Zucchini Lemon Muffin Gems

Classic zucchini bread is a summer staple for anyone who has a garden or frequents the farmers market. I always seem to have one extra zucchini lying around. But I find the typical spiced zucchini bread recipe, though delicious, a little heavy in summer, so I adapted a classic English lemon drizzle bread recipe […]

Meyer Lemon Chiffon Dip for Spring Vegetables

Simple, delicious spring vegetables really just need the simplest of bright accompaniments, and this dip really hits the bill. It is tangy with lemon and perfectly creamy and even has a sunshine-y yellow hue.

I love this at room temperature as a dip for lightly steamed asparagus spears or artichoke leaves. Put it can […]

Pickled Asparagus

The spring brunch season starts with Easter, then moves onto graduation parties, wedding parties and long vacation weekends. That’s where this recipe comes from. It was a request for Easter brunch – pickled asparagus to garnish Bloody Marys. I of course complied. Because quick pickles like these are so easy, […]
