I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Strawberries with Sweet Tea Dressing

Strawberries with Sweet Tea Dressing

Strawberries come into season when the beginnings of spring are arriving.  When it’s time air out the seersucker and the sandals and give the grill a good clean and make sure the big cooler is ready for weekends at the lake and beach.  And though we drink sweet tea all year, the mint is […]

Moroccan Chicken Salad

Moroccan Chicken Salad

As the weather really starts to heat up, a cool summer supper salad is a great thing to have in the fridge.  Chicken salad is perfect picnic or party food, great for a weekend at the lake or lunch by the pool.  I love a good chicken salad and make many different versions depending […]

Strawberry Mint Vinaigrette

Strawberry Mint VInaigrette

It’s always nice to whip up a simple, homemade dressing for a salad, and this one is really special.  A little sweet from the berries with the nice summery hit of mint.  And it’s a great way to use up some berries lingering in the fridge.  I love it on a salad of fresh […]

Sweet Tea Jelly

Sweet Tea Jelly

Canning is my summer time obsession.  From the first strawberries of spring to the last pears of fall, I spend my weekends putting up my famers market bounty.  Then the market closes for the season, I put the canner back in the pantry and shelf the jars for the next year.  But at some […]

Sweet Tea Cookies

The flavor of sweet tea is the flavor of the South.  With the wafting aroma of mint and the tang of lemon, with that tooth-achingly sweet depth.  I love to transform those flavors into many forms, from bourbon punches to sorbet to these cookies.  They are redolent with those iconic flavors. The texture of […]

Zucchini Lemon Muffin Gems

Classic zucchini bread is a summer staple for anyone who has a garden or frequents the farmers market.  I always seem to have one extra zucchini lying around.  But I find the typical spiced zucchini bread recipe, though delicious, a little heavy in summer, so I adapted a classic English lemon drizzle bread recipe […]

Watermelon, Cucumber and Mint Sorbet

I generally think a cold slice of watermelon is the most refreshing treat on a hot summer’s day. I also cool myself off with a tall glass of water infused with cucumber. Blend these two together, add the summer taste of fresh mint and freeze them and consider yourself refreshed. This is just plain […]

Sweet Tea Julep

It is hot out there!  It’s hot every summer in the South, but it still seems to be one of our favorite topics of conversation.  And we always talk as if it is some sort of surprise. “Can you believe how hot it is?  It might hit 105° today!” But somehow we manage.  Our […]

Summertime Mint Dressing

If I could create my own personal fragrance, or have some sort of mechanism that made everywhere I go have a certain happy, peaceful scent, the primary element would be fresh garden mint.  It smells like summer to me.  And sweet tea.  And the South.  And all good things.  I suppose the variety is […]

Freshly Minted Lemonade

This weekend marks the unofficial beginning of summer.  That means vacations and swimming and long, lazy days and all sorts of good things.  But, for my part of the world at least, it also means heat and humidity.  So a tall, cool drink is always in order.

There is just something so refreshing about […]
