The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Zucchini Pasta Bake with Mint Pesto

A few years ago, on a family trip to Italy, we had an amazing meal prepared by a local chef that included handmade ravioli with a zucchini mint pesto sauce. It was one of the culinary highlights of the trip for me. I asked the chef how it was made, but my lack of […]

Mint Julep Vinaigrette

Mint Julep Vinaigrette

Every once in awhile, you absolutely stumble over an idea that makes you feel like a real culinary wizard. This is one of those for me. I was having some friends over to grill burgers. I made a few dishes and I’d picked up some amazing produce at the farmers market, including some beautiful […]

Christmas Fruit Salad

Christmas Fruit Salad

Christmas is, for me, a time of indulgence. I gorge myself on cookies and candies and appetizers and heavy meals. Strawberries with Sweet Tea Dressing

Strawberries with Sweet Tea Dressing

Strawberries come into season when the beginnings of spring are arriving. When it’s time air out the seersucker and the sandals and give the grill a good clean and make sure the big cooler is ready for weekends at the lake and beach. And though we drink sweet tea all year, the mint is […]

Strawberry Mint Vinaigrette

Strawberry Mint VInaigrette

It’s always nice to whip up a simple, homemade dressing for a salad, and this one is really special. A little sweet from the berries with the nice summery hit of mint. And it’s a great way to use up some berries lingering in the fridge. I love it on a salad of fresh […]

Sweet Tea Jelly

Sweet Tea Jelly

Canning is my summer time obsession. From the first strawberries of spring to the last pears of fall, I spend my weekends putting up my famers market bounty. Then the market closes for the season, I put the canner back in the pantry and shelf the jars for the next year. But at some […]

Sweet Tea Cookies

The flavor of sweet tea is the flavor of the South. With the wafting aroma of mint and the tang of lemon, with that tooth-achingly sweet depth. I love to transform those flavors into many forms, from bourbon punches to sorbet to these cookies. They are redolent with those iconic flavors. The texture of […]

Zucchini Lemon Muffin Gems

Classic zucchini bread is a summer staple for anyone who has a garden or frequents the farmers market. I always seem to have one extra zucchini lying around. But I find the typical spiced zucchini bread recipe, though delicious, a little heavy in summer, so I adapted a classic English lemon drizzle bread recipe […]
