I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Almond Amaretto Cherry Muffins

Almond Amaretto Cherry Muffins

A basket of nice, sweet muffins is a wonderful addition to a breakfast or brunch table, and these almond-y bites are made really moist with the addition of almond paste. A  bite-sized version of my Simple Moist Almond Cake. Nice tart cherry is a great pairing with almond – if you use big Bings, [...]

Merry Morning Muffins with Eggnog Butter (Overnight Gingerbread and Cranberry Muffins)

Everyone is up earlier than any other day of the year to see what’s under the tree.  Wrapping paper ripping, bows flying, boxes everywhere.  And somewhere in there, folks get hungry.  Just a nibble before the big celebration.  Something special, but simple.  There’s just too much going on to whip up a gourmet feast.  [...]

Oatmeal Get Up and Go Muffins

When the reality of the new school year and the end of summer hit, having a quick, portable breakfast on hand can be a serious boon.  And these muffins fit the bill.  I often find muffins labeled “healthy” to be leaden gut bombs, but these are light and tender, thanks to the magic of [...]

Zucchini Lemon Muffin Gems

Classic zucchini bread is a summer staple for anyone who has a garden or frequents the farmers market.  I always seem to have one extra zucchini lying around.  But I find the typical spiced zucchini bread recipe, though delicious, a little heavy in summer, so I adapted a classic English lemon drizzle bread recipe [...]

Walnut, Goat Cheese and Herb Muffins

Muffins are the easiest bread to whip up.  No yeast, not kneading, no rising.  I love sweet muffins for breakfast or an afternoon snack, and I have certainly had muffins that are less sweet and more savory, but I really wanted to develop something straight up savory.

I have many recipes for sweet muffins [...]

Peach and Ginger Muffins

The combination of peaches and ginger is a favorite of mine, and in these muffins, it really shines.  These muffins are not too sweet, but burst with flavor and texture.  Fresh, in-season peaches are such a summer treat, make the most of the season.

Use real ginger ale for this – the kind you [...]

Toasted Corn and Bacon Muffins

A good corn muffin is a thing of beauty. The perfect accompaniment to a bowl of soup or a supper salad, and so comforting passed around the table in a basket while still warm. Slather on a little butter, and you’ve got a bite of heaven, my friend.

These tender corn muffins have the [...]

Blackberry Orange Muffins

I have waxed poetic about my love for fresh blackberries before, with my Tennessee Blackberry Jam Cake, and at this time of year, when the big juicy berries are all over the farmers markets, I can hardly resist.  I find that I buy way more than I can consume on their own, sprinkled with [...]
