I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Mustard Creamed Pearl Onions

Musatrd Creamed Pearl Onions

Many years ago, when I first started cooking a big Thanksgiving meal, I followed the suggested menu of some magazine or cookbook to the letter, despite existing family traditions or personal preferences. One of the dishes on the list of traditional Thanksgiving fare was creamed onions, which I had never had before. My family […]

Country Ham Stuffed Eggs

Anytime you pair a classic Southern ingredient with a classic Southern dish its bound to be a wonderful thing. And for me, these are too longtime family favorites, so I earned some extra bonus points. As I’ve said before, in my family we always call them stuffed eggs, not devilled eggs, because devilled smacks of […]

Country Ham Paté

Country Ham Paté

Football and tailgating season have arrived, so I offer this little tidbit.  Country Ham Paté has the down-home goodness of salty, savory country ham, with a slightly sophisticated twist.  It is easily portable and imminently useful.  Try it simple spread on crackers or corn chips, or sandwiched between the halves of little […]

Bacon Wrapped Pork Tenderloin with Bourbon Butter Sauce

Bacon Wrapped Pork Tenderloin with Bourbon Butter Sauce

This dish, I can hardly call it a recipe, is one of those meal ideas that’s passed around from family to friend to book club to the office to tennis groups to cocktail party and on and on.  You know, that simple recipe someone rattles off when you worry about new dinner ideas or […]

Kielbasa Pasta with Honey Mustard Sauce

We are in the transitional season.  Not quite full on fall, but summer vacation is definitely over. This is a nice, hearty pasta with flavors that bridge that gap between summer and fall.  Stone ground mustard provides a nice tang and texture, but the hit of the bright yellow version deepens the mustard flavor.  […]

Bacon and Egg Salad

You will not often find me trying to recreate a recipe inspired by a fast food chain restaurant.  But this is an exception.  There is a fresh sandwich chain in England that makes a great breakfast sandwich, one that I almost always get in the airport before an early morning departure.  It’s a long […]

Mustard Bacon Potato Salad

There is perhaps no better accompaniment to a summer barbecue or picnic than a good potato salad.  But there are a lot of bad potato salads out there.  And I have never been a huge fan of mayonnaise-only potato salads.  To me, they tend to be heavy and gloopy and no one wants to eat one […]

Sweet Potato Mustard, Bacon Mayonnaise and Cranberry Ketchup

When I claimed thanksgiving for my own, I wanted to create a tradition for this new configuration of family, one for grown-ups and kids alike.  So I came up with the Thankful Tree.  My mom drew a big tree, complete with falling leaves and acorns and a bunny rabbit at the base, […]
