The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Herbed Focaccia Dinner Rolls

If you search through the bread recipes on this site, you will see that it maps out my quest to bake fresh bread without too much effort. I am not one who is going to carefully nurse starters or delicately knead and form stylish loafs of artisan breads. The mysteries of yeast sometimes elude me. […]

Farro and Herb Minestrone

There are one million and one delicious versions of an Italian style bean soup that it is almost impossible to narrow down a favorite. So the best thing to do, in my opinion, is to start from scratch, and that is what I’ve done here. I don’t really know if this is technically a minestrone, […]

Cherry Tomato and Sweet Onion Bake

I am always enticed by cherry tomatoes at the farmers market. All the pretty colors and shapes and sizes. They are all just so pretty, though the perfect orbs of a classic Sweet 100 or Tumbling Toms always catch my eye. And, as with much of the bounty of summer produce, I have a tendency […]

Greek Style Green Bean Salad

Every year, I look forward with great anticipation to the Memphis Greek Festival. I go as soon as it opens and stock up on frozen spanikopita, delight at the flaming cheese saganaki and pig out on the cookies and pastries made by the ladies of the church. And it always gets me thinking about Greek […]

Greek Inspired Shrimp and Feta Spaghetti

The Greek flavors of a shrimp, tomato and feta are a favorite of mine, and always remind me of summer, and a trip to Greece and the island of Mykonos one summer many years ago. Our favorite dish was Shrimp Saganaki, a rich tomato sauce with shrimp nestled in, covered in a blanket of fresh […]

Italian Summer Cherry Tomato Tart

I’m recently back from a month in Italy, exploring the art and history and architecture, but let’s be honest, mostly exploring the food. Because that is what I love the most. The recipes, techniques and ideas I learned are working around in my head still, but I am sure they will come out here […]

Greek Lemon and Rice Soup

Greek Lemon Rice Soup

My area is sorely lacking in Greek restaurants, but we do have a wonderful Greek Festival every year, and they have a lovely roasted chicken with lemon and rosemary on the menu that is a once a year treat. But about a year ago, a restaurant opened up (you may have one in your […]

Parmesan Zucchini Bites

Parmesan Zucchini Bites

Tomato, Brie and Herb Pasta

I’ve been making this dish for years, decades if I’m honest. I really thought it was my own unique creation, and I patted myself on the back for its genius every time I made it.  It’s been my date night dinner, my decadent solo treat and my impressive meal for friends.  I made it in my […]

Baked Zucchini and Tomatoes

It’s no secret that I love the farmers market.  My Saturday morning trips followed by a day of canning or putting things by, are the highlight of my week.  I am so inspired by all the produce and the people who love food.  And I have found it is an amazing source of advice […]
