I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Creamy Italian Sausage and Pumpkin Manicotti

As I remember it, trick or treating is hard work.  Lots of walking, in what is invariably an uncomfortable costume, that heavy bag of candy and keeping your best manners on under all that stress.  But the promise of a seemingly endless supply of fun-size candy bars made it all worthwhile.  I even liked […]

Kielbasa Pasta with Honey Mustard Sauce

We are in the transitional season.  Not quite full on fall, but summer vacation is definitely over. This is a nice, hearty pasta with flavors that bridge that gap between summer and fall.  Stone ground mustard provides a nice tang and texture, but the hit of the bright yellow version deepens the mustard flavor.  […]

Tomato, Brie and Herb Pasta

I’ve been making this dish for years, decades if I’m honest. I really thought it was my own unique creation, and I patted myself on the back for its genius every time I made it.  It’s been my date night dinner, my decadent solo treat and my impressive meal for friends.  I made it in my […]

Creamy Macaroni and Cheese with Country Ham and Leeks

From the first time I made macaroni and cheese, I’ve used this basic recipe, with the sauce you simply stir up.  We were not a big macaroni and cheese family, and never had any version from the box until college, when the hot pot was our main cooking apparatus and I had an ingenious […]

Pasta with Gorgonzola, Apples and Walnuts

When I travel, one of my greatest joys is sampling as much of the local food as possible.  But on long trips, even I get a little weary.  Sometimes I crave more familiar flavors, sometimes I am just too tired to search out a specialty restaurant and just want what’s close.  And sometimes, this […]

Baked Gnocchi with Gorgonzola and Sage Cream

It is such a little bit of magic when something truly easy is also masterfully elegant.  And that is the case with this simple pasta dish.  So few ingredients, only a little fiddling around and you end up with bubbling deliciousness.  Maybe because the ingredients are just a little out […]

Italian Sausage and White Bean Soup with Orecchiette

I was once invited to bring a soup to a soup potluck and I readily agreed, because I love soup and getting together with friends to eat soup is a great idea.  But I forgot that I had agreed to it, until the hostess called a day before to ask what soup I was […]

Chicken, Prosciutto and Rosemary Lasagna

A rut-buster.  That’s what this recipe is all about.  Veering off the road a little bit, getting out of the ordinary. Traditional lasagna is a good thing, make no mistake, but it’s nice to go in a different direction every once in a while.  Move away from the meat sauce to a creamy white […]
