Southern Snacks Cookbook

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Fresh Peach Pound Cake with Bourbon Butter Glaze

Peach Pound Cake with Bourbon Butter Glaze

Last year, I accidently bought twenty-five pounds of peaches. An orchard that produces particularly delicious fruit had a special pop-up and I just happened to drive by. I couldn’t resist, even though it was the middle of the week and I was busy and had no particular […]

Peach Amaretto Cheesecake

I accidently bought 25 pounds of peaches. I’ve been reading about these peaches from a certain farm that only come to Memphis twice a season. People rave about these peaches. I missed any notification that they were coming, but then one day going about my own business, I got stuck in traffic behind cars […]

No Churn Peach Ice Cream with Sweet Tea Caramel Sauce

It is hot here. All summer. So ice cream is must. Homemade ice cream is a special treat, but it involves a little effort in the kitchen that I’m not always up to in the heat of summer. I have memories of making ice cream with my family as a child. We had this […]

Simple Summer Peach Pie

Pie speaks so of summer to me, particularly ones bursting with the best of summer fruit. And when it easy to make, like this one, it is a real bonus. I pulled the original version of this recipe from a community cookbook years ago when I had some peaches sitting on the counter. Like most […]

Peach Julep Jam

Peach Julep Jam

The joy of summer peaches! There is nothing like a fresh, local, juicy peach. I eat them up during their season.I bake with them and But they are just so good, I try to preserve them as well for a fresh taste of summer any time of year, spiced, pickled and jammed. My obsession with […]

Spiced Baked Fruit Casserole

Spiced Baked Fruit Casserole

Baked fruit casseroles are a favorite food memory for me. They always appeared at holiday buffets, usually when a ham was the centerpiece. Recipes for baked fruit are ubiquitous in community cookbooks, and I was particularly fond of a curried fruit casserole recipe that has always been a favorite around here. But my Mom […]

Peach Bourbon Buttermilk Pudding with Candied Pecans

Peach Bourbon Buttermilk Pudding with Candied Pecans

The combination of fresh summer peaches and Southern bourbon is a favorite of mine, and I use it in savory dishes, like Peach Bourbon Grilled Pork Tenderloin, or in sweets, like Peach Butterbourbon Sauce. Faced with an abundance of gorgeous peaches this year, I wanted to create a simple, cool dessert – perfect for […]

Saucy Peach and Blueberry Cobbler

Saucy Peach and Blueberry Cobbler

Peaches and blueberries are the perfect example of the old saw “what grows together, goes together.” Fuzzy, rose-tinted peaches and dusky hued blueberries make their appearance at the farmers market at the same time, trumpeting the height of summer fruit season.

I love fruit cobbler, the traditional peach being a favorite, and I have […]

Grilled Peach Bourbon Pork Tenderloin

Summer grilling season is upon us, and I think pork tenderloin is a wonderful meat to grill. Its quick, easy and really takes on flavor. Add a marinade and sauce made from fresh, peak of the season peaches and a splash of bourbon and you’ve got a real Southern treat. Fresh green beans are […]

Sweet Grits and Sorghum Peaches

Sweet grits is an idea you occasionally, but rarely, see in old community cookbooks. The kind that are handwritten and mimeographed, and use measures like “a coffee cupful” and “butter the size of a hen egg.” Sweet grits are more of concept a people talk about. You see, grits are one of those dishes […]
