I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Pasta with Chestnuts, Pancetta and Sage

This recipe was born from my love for chestnuts, and my overzealous purchase of them before Thanksgiving. I include chestnuts in my dressing, and when I see them on the shelves, I go a little nuts and always buy more than I need.  So after that holiday madness dies down, I find ways to […]

Creamy Italian Sausage and Pumpkin Manicotti

As I remember it, trick or treating is hard work.  Lots of walking, in what is invariably an uncomfortable costume, that heavy bag of candy and keeping your best manners on under all that stress.  But the promise of a seemingly endless supply of fun-size candy bars made it all worthwhile.  I even liked […]

Chicken and Bacon Pot Pie with Sweet Potato Crust

Autumn is officially here, though the weather may be lagging behind a bit.  I saw my first lovely russet-hued oak leaf blowing across the patio the other day.  And I am ready.  I am ready for soups and stews, winter squash, apples, pears and maple syrup.  I am ready to get the […]

Italian Sausage Dip with Fontina and Sage

It’s nice to have a really hearty, hot dip as part of the spread when the ravenous football hordes are hungry. This is a jazzed up version of a classic sausage dip recipe, with warm, winter flavor.  Zesty Italian sausage with the bite of fennel is paired with woodsy sage and creamy, […]

Roasted Butternut and Chestnut Purée

I love autumn.  I love wearing sweaters, snuggling under a blanket, comforting, slow-cooked stews, steaming bowls of soup.  And my favorite holiday, Thanksgiving, which of course leads to a wonderful Christmas season.  But I will admit, that when fall comes on in earnest, and I see the end of tomatoes at the farmer’s market, […]

Bacon-Blanketed, Herb Roasted Turkey

This is the turkey. I’ve been perfecting this for many years now.  I must say, it is a showstopper, and delicious to boot, because I treat it well.  I send my turkey to a bacon spa. It gets a salt scrub, a bacon butter deep tissue massage, a hand-woven bacon spa robe, […]

Baked Gnocchi with Gorgonzola and Sage Cream

It is such a little bit of magic when something truly easy is also masterfully elegant.  And that is the case with this simple pasta dish.  So few ingredients, only a little fiddling around and you end up with bubbling deliciousness.  Maybe because the ingredients are just a little out […]

Butternut and Sage Lasagna

Ever since I was a student in England, all those years ago, I have made an annual pilgrimage to London.  On one such trip, when I was young and still interested in trying to keep up with the latest, some friends and I went to a very trendy Italian restaurant, in a lower […]

Savory Sausage Breakfast Cake

I spend the vast majority of my time creating recipes.  Thinking about ideas, how to make them work, what I want to cook, what I want to eat, how to share the idea. And people often ask me about my process.  Sometimes ideas pop into my head fully formed, but more often, like this […]

Pork, Sage and Apple Burgers

Familiar is good.  A good, juicy burger with melty cheese on a soft bun.  Maybe some fries on the side.  But different is good too.  And this pork, sage and apple burger fits that bill perfectly.  Juicy pork kept moist with tart green apples and tangy onions – a brilliant combination that will make […]
