I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Cranberry Turkey Casserole

Cranberry Turkey Casserole

Leftovers, leftovers, leftovers. One of the most important Thanksgiving traditions. And I love them. I purposely make a bigger turkey than we will ever eat so I have lots of extra for sandwiches and soups and all manner of things. Truthfully, I make extra everything, and though I share a great deal of it with […]

Thanksgiving Sausage Bites with Cranberry Mustard Dip

Thanksgiving Sausage Bites with Cranberry Mustard Dip

Thanksgiving involves a lot of food. But even when I know how much will end up on the table, I like to put out a little nibble for guests before the main event, while we finish cooking the turkey, have a few friendly drinks and settle in with each other. Sausage balls are one of […]

Blackberry Sage Skillet Cake

Blackberry Sage Skillet Cake

Fruit and herbs are a wonderful combination. I’ve made Peaches Poached in Basil, a Blueberry Basil Compote, even a Strawberry Mint Vinaigrette. Blackberries and sage a re a lovely pairing, the berries are sweet and the sage woodsy, but together they sing. Sage isn’t generally associated with sweet recipe, but it should be for […]

Root Vegetables with Walnut Sage Crumble

Root Vegetables with Walnut and Sage Crumble

Everyone is always eagerly anticipating the arrival of spring and the excitement of the fresh vegetables that begin to grow. And I love that too. Then the overwhelming bounty of summer, when there is so much fresh produce, there is hardly time to sample it all. But I love winter vegetables too. Rich, hearty […]

Pasta with Chestnuts, Pancetta and Sage

This recipe was born from my love for chestnuts, and my overzealous purchase of them before Thanksgiving. I include chestnuts in my dressing, and when I see them on the shelves, I go a little nuts and always buy more than I need.  So after that holiday madness dies down, I find ways to […]

Creamy Italian Sausage and Pumpkin Manicotti

As I remember it, trick or treating is hard work.  Lots of walking, in what is invariably an uncomfortable costume, that heavy bag of candy and keeping your best manners on under all that stress.  But the promise of a seemingly endless supply of fun-size candy bars made it all worthwhile.  I even liked […]

Chicken and Bacon Pot Pie with Sweet Potato Crust

Autumn is officially here, though the weather may be lagging behind a bit.  I saw my first lovely russet-hued oak leaf blowing across the patio the other day.  And I am ready.  I am ready for soups and stews, winter squash, apples, pears and maple syrup.  I am ready to get the […]

Italian Sausage Dip with Fontina and Sage

It’s nice to have a really hearty, hot dip as part of the spread when the ravenous football hordes are hungry. This is a jazzed up version of a classic sausage dip recipe, with warm, winter flavor.  Zesty Italian sausage with the bite of fennel is paired with woodsy sage and creamy, […]

Roasted Butternut and Chestnut Purée

I love autumn.  I love wearing sweaters, snuggling under a blanket, comforting, slow-cooked stews, steaming bowls of soup.  And my favorite holiday, Thanksgiving, which of course leads to a wonderful Christmas season.  But I will admit, that when fall comes on in earnest, and I see the end of tomatoes at the farmer’s market, […]

Bacon-Blanketed, Herb Roasted Turkey

This is the turkey. I’ve been perfecting this for many years now.  I must say, it is a showstopper, and delicious to boot, because I treat it well.  I send my turkey to a bacon spa. It gets a salt scrub, a bacon butter deep tissue massage, a hand-woven bacon spa robe, […]
