I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Thanksgiving Sausage Bites with Cranberry Mustard Dip

Thanksgiving Sausage Bites with Cranberry Mustard Dip

Thanksgiving involves a lot of food. But even when I know how much will end up on the table, I like to put out a little nibble for guests before the main event, while we finish cooking the turkey, have a few friendly drinks and settle in with each other. Sausage balls are one of […]

Whole Lemon Squares

Whole Lemon Squares

My mom made great lemon squares. I say did, because she just doesn’t do it anymore. They were her go to take-along to school events and family functions, and a special treat for us. She had volunteered to bring lemon squares to a school field trip for me when I was in elementary school, […]

Café Brûlot Brownies

Café Brulot Brownies

Café Brûlot is one of the spectacular presentation dishes of New Orleans fine dining. It requires a special brûlot bowl and ladle and a lot of skill and daring. Coffee is mixed with brandy, orange liqueur, orange and lemon peels and spices and lit afire. In the traditional restaurants of New Orleans, the whole […]

Double Caramel Bars

Double Caramel Brownies

Sweet and rich and decadent – and a wonderful treat in the midst of the dark winter months. These caramel frosted brown sugar bars are a favorite of mine. I tend toward caramel. I love chocolate, of course, but if given the choice I’d choose caramel. So these are a nice deviation from a […]

Cheddar Chutney Spread

Cheddar Chutney Spread

It is always nice to have a simple, quick party recipe in you back pocket during the holidays.  Something you can whip up quickly and without too much pre-planning and take to the party of gathering you forgot about – you know, you volunteered a month ago to bring a snack, but completely let […]

Spiced Dolly Bars

Spiced Dolly Bars

In the kitchen, surrounded by a surfeit of holiday baking supplies, I had a sudden craving for Hello Dolly Bars.  I love Hello Dollies (or Seven Layer Bars or Magic Bars, whatever you call them), but they are not something I generally make, because I have lots of friends for whom it’s […]

Apple Gruyere Spread

Apple and Gruyere Spread

Here’s a fun fall snack that features beautiful green apples and nutty gruyere cheese. A great spread on hearty wheat crackers, this also makes a wonderful sandwich filling that’s particularly suited to rye bread.  In fact, those little square slices of party rye are great for an appetizer or little tea sandwiches.

This is […]

Country Ham Paté

Country Ham Paté

Football and tailgating season have arrived, so I offer this little tidbit.  Country Ham Paté has the down-home goodness of salty, savory country ham, with a slightly sophisticated twist.  It is easily portable and imminently useful.  Try it simple spread on crackers or corn chips, or sandwiched between the halves of little […]
