Southern Snacks Cookbook

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Parmesan Zucchini Bites

Parmesan Zucchini Bites

Quick, summery and simple. This is the perfect passable bite for a party or a wonderful side to a summer meal. If you tend to end up with a couple of extra zucchini hanging around after a trip to the farmers market, this is a great way to use them up, as a starter […]

Double Caramel Bars

Double Caramel Brownies

Sweet and rich and decadent – and a wonderful treat in the midst of the dark winter months. These caramel frosted brown sugar bars are a favorite of mine. I tend toward caramel. I love chocolate, of course, but if given the choice I’d choose caramel. So these are a nice deviation from a […]

Cheddar Chutney Spread

Cheddar Chutney Spread

It is always nice to have a simple, quick party recipe in you back pocket during the holidays. Something you can whip up quickly and without too much pre-planning and take to the party of gathering you forgot about – you know, you volunteered a month ago to bring a snack, but completely let […]

Spiced Dolly Bars

Spiced Dolly Bars

In the kitchen, surrounded by a surfeit of holiday baking supplies, I had a sudden craving for Hello Dolly Bars. I love Hello Dollies (or Seven Layer Bars or Magic Bars, whatever you call them), but they are not something I generally make, because I have lots of friends for whom it’s […]

Apple Gruyere Spread

Apple and Gruyere Spread

Here’s a fun fall snack that features beautiful green apples and nutty gruyere cheese. A great spread on hearty wheat crackers, this also makes a wonderful sandwich filling that’s particularly suited to rye bread. In fact, those little square slices of party rye are great for an appetizer or little tea sandwiches.

This is […]

Country Ham Paté

Country Ham Paté

Football and tailgating season have arrived, so I offer this little tidbit. Country Ham Paté has the down-home goodness of salty, savory country ham, with a slightly sophisticated twist. It is easily portable and imminently useful. Try it simple spread on crackers or corn chips, or sandwiched between the halves of little […]

Bacon Fried Pecans

Bacon Fried Pecans

I don’t know who makes these decisions, but there is an endless list of “National Days” celebrating foods, dishes and ingredients. I recently saw that it was National Pecan Month, so I thought I better pull out a preparation for the iconic Southern nut. These are a salty, crunchy snack for the bar, or […]

Pimento Cheese Crisps

You’ve had pimento cheese on a cracker, now you can have pimento cheese in your cracker. In my on-going quest to eat as much pimento cheese as possible, I arrive at these little gems. They are a hybrid of two Southern party classics – pimento cheese, the pate of the South, and the classic […]

King Cake Bars

I have never set myself the task of making a real King Cake, as I figure there are enough people who do that already. My brother used to send me delicious King Cakes from a bakery in New Orleans when I was in college. Those cakes were moist and tender with a cream cheese […]

Italian Sausage Dip with Fontina and Sage

It’s nice to have a really hearty, hot dip as part of the spread when the ravenous football hordes are hungry. This is a jazzed up version of a classic sausage dip recipe, with warm, winter flavor. Zesty Italian sausage with the bite of fennel is paired with woodsy sage and creamy, […]
