I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Butterscotch Babies

Every once in a while, it’s nice to take a step out of the brownie box.  Technically, I suppose these qualify as a blondie, but for some reason, that term has always bugged me.  I don’t really remember where this recipe came from, but I seem to remember cleaning out the panty and finding a [...]

Bacon Popcorn

Bacon Popcorn.  Yep.  How about a giant bowl of this in front of the big game? Slightly sweet, perfectly salty with the amazing flavor of crispy bacon. Lemon Garlic Cashews

These tangy nuts are a great nibble with a glass of wine or to snack on during the day.  Wrap attractively for great little happy gifts.  Look for whole raw cashews in the bulk section of whole food stores or upscale markets.  Already roasted nuts won’t soak up the lemon juice. Blue Cheese and Fig Savories

If you are like me, you always offer to bring something when invited to someone’s house.  I mean the offer, I always love an opportunity to cook for people, but sometimes it’s hard to come up with a quick idea on the fly. And when it’s one of those roaming parties – not a seated [...]

Thanksgiving Popcorn

Thanksgiving Popcorn

When I was a kid, my favorite holiday TV special was always A Charlie Brown Thanksgiving.  Back in those days, there was no DVR, DVD or even tapes.  When the special was on, you watched it and that was it.  No second chances. Maybe my love of Charlie Brown Thanksgiving, even more than the Great [...]
