Southern Snacks Cookbook

The Southern Sympathy Cookbook

I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Strawberry Ginger Cake

Strawberry Ginger Cake

Strawberries ring in the start of the canning season for me. I get so excited, I buy quarts and quarts. Which means I sometimes end up with some surplus after I make jars and jars of jam, more than I can eat on my own. So I look for simple, quick […]

Strawberry Champagne Mousse with Champagne Cakelettes

What could be more elegant during the short Spring season of balmy weather and strawberries? Wedding and baby showers, graduation parties, and end of school events all need a little sophisticated touch. What I love about these recipes is the result really surpasses the effort. For a little work, you get two delightful sweet […]

Fresh Strawberry Biscuits with Chocolate Gravy

I have combined a lot of words I like here. Strawberries and biscuits and chocolate. I’m not sure I can do any better for a strawberry season brunch treat. I think strawberries and chocolate are a timeless pairing, though usually found in desserts and candies. Of course, I’m not saying you can’t eat these […]

Pineapple Ginger Fruit Dip

I am forever looking for interesting ways to serve strawberries on a spring buffet. Their natural beauty brightens up any table, and I always want to make the most of their short growing season. Not that there is anything wrong with eating strawberries on their own, but it’s nice to have a little delicious extra […]

Strawberry Basil Chiffon Cake with Strawberry Basil Sauce

Chiffon Cake always sounds so delightfully old-fashioned to me. Maybe because chiffon just sounds like a frilly, girly, poufy tea-party dress. I always see chiffon cake recipes in older community cookbooks, in all sorts of flavor combinations. I don’t think people make chiffon cakes much anymore, but the light, foamy sponge is a treat […]

Strawberry Rosemary Muffins with Strawberry Rosemary Butter

Strawberry Rosemary Muffins with Strawberry Rosemary Butter

In the kitchen, excess is often the mother of invention and this recipe is a perfect example of that principle. I went overboard buying fresh strawberries, and decided to bake them into something delicious before the overflow went bad. I hadn’t made muffins in awhile, so that seemed like a good idea. As I […]

Fresh Strawberry and Cream Pudding

Fresh Strawberry and Cream Pudding

A few years ago, I created a Peach Bourbon Buttermilk Pudding to serve to some guests, solely because it was peach season and I had recently acquired some pretty glass vessels that just needed to be used. Now that strawberry season is in full swing, I found myself with some extra berries after a jam […]

Chocolate Dutch Baby with Vanilla Roasted Strawberries

Chocolate Dutch Baby with Vanilla Roasted Strawberries

It is hard not to want to eat something called a Dutch Baby. It’s such a sweet and inviting name. The puffy oven pancakes have experienced something of a renaissance in the last few years, with lots of recipes showing up on the internet for sweet and savory versions with all sorts of flavorings and […]

Strawberry Almond Morning Cake

Strawberry Almond Morning Cake

The strawberries are here! The strawberries are here! I anticipate strawberry season all year. I know you can buy strawberries every day now, but there is nothing like a fresh, seasonal, locally grown berry. So I wait. I may use some frozen berries during the out-of season-months, but I rarely buy the berries in […]

Strawberries with Sweet Tea Dressing

Strawberries with Sweet Tea Dressing

Strawberries come into season when the beginnings of spring are arriving. When it’s time air out the seersucker and the sandals and give the grill a good clean and make sure the big cooler is ready for weekends at the lake and beach. And though we drink sweet tea all year, the mint is […]
