I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Mom’s Dilled Potato Salad

Every once in a while, I get stuck. I feel like I’ve run out of recipe ideas, so I look everywhere for inspiration. I was recently stuck like this, right before summer, and I whined about it to my mom. She simply said “make that potato salad, it’s so good in summer” as if I […]

Greek Inspired Shrimp and Feta Spaghetti

The Greek flavors of a shrimp, tomato and feta are a favorite of mine, and always remind me of summer, and a trip to Greece and the island of Mykonos one summer many years ago. Our favorite dish was Shrimp Saganaki, a rich tomato sauce with shrimp nestled in, covered in a blanket of fresh […]

Blackberry Buttermilk Ice Cream with Bay Leaf Sauce

Bay leaves rarely play a starring role in a recipe. I tend to think that if you leave the bay leaf out of a recipe, you may not notice, but the elusive flavor adds a definite boost to soups and stews, and it’s an essential ingredient in a classic French herb seasoning bouquet garni. When […]

Sweet Potato Vichyssoise

I adore chilled soups during the hot summer months and often wonder why restaurants don’t serve more of them, or people make them more often. Nothing could be more refreshing, and filling. Make a big batch of cold soup and keep it in the fridge for quick lunches, cooling snack or part of a […]

Grilled Sweet Tea Glazed Pork Chops

Grilled Sweet Tea Glazed Pork Chops

Memorial Day is coming and marks the official start of summer party season. Millions of people will be firing up the grill for the long weekend and beyond,  and here in the South, they’ll be making endless pitchers and jugs of ice cold sweet tea to keep things cool.  So I decided to combine the […]

Mustard Bacon Potato Salad

There is perhaps no better accompaniment to a summer barbecue or picnic than a good potato salad.  But there are a lot of bad potato salads out there.  And I have never been a huge fan of mayonnaise-only potato salads.  To me, they tend to be heavy and gloopy and no one wants to eat one […]

Zucchini Sort of Soufflé

I have a shopping problem.  Fortunately, it’s not for shoes or designer handbags, it’s at the farmers market.  I am so enamored of all the beautiful fresh produce and artisan made foods that my eyes are often bigger than my shopping bag.  I try to go with a plan and a list, but I […]

Watermelon Pie

Summer in the South, the heat, the humidity, is best dealt with by a cool slice of fresh watermelon.  The thwack of a big knife slicing into the thick rind and the slurp as it cuts through the flesh is up there on the list of summer sounds with crickets humming and the sprinkler […]
