I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.
I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

I love autumn. I love wearing sweaters, snuggling under a blanket, comforting, slow-cooked stews, steaming bowls of soup. And my favorite holiday, Thanksgiving, which of course leads to a wonderful Christmas season. But I will admit, that when fall comes on in earnest, and I see the end of tomatoes at the farmer’s market, my [...]
When I claimed thanksgiving for my own, I wanted to create a tradition for this new configuration of family, one for grown-ups and kids alike. So I came up with the Thankful Tree. My mom drew a big tree, complete with falling leaves and acorns and a bunny rabbit at the base, on a piece [...]
I always think it’s nice to start off the Thanksgiving celebrations with a special cocktail and a few nibbles. It sets a convivial mood and keeps everyone occupied while the last touches of the meal are being tended too. Frankly, I like to have everyone’s hands busy while I am trying to get the food [...]
You are going to want a loaf of this around the house during the Thanksgiving holiday. It is beautiful, autumnal and something of an achievement to show your friends and family. It is great spread with butter. Fig, Bourbon and Vanilla Bean Jam is a real treat. It is gorgeous toasted, and makes amazing leftover [...]
Gravy is essential to a Thanksgiving turkey, but only if it is good gravy. And what makes gravy good is delicious drippings from a beautifully roasted bird. Many gravy methods involve making it right in the pan the turkey was cooked in, to scrape up all the bits and juices. And that’s great. But I [...]
This is the turkey. I’ve been perfecting this for many years now. I must say, it is a showstopper, and delicious to boot, because I treat it well. I send my turkey to a bacon spa. It gets a salt scrub, a bacon butter deep tissue massage, a hand-woven bacon spa robe, some time in [...]
I’m going to go all Southern on you again with this delicious, old-fashioned, homey dessert perfect for the autumn table. I’m not, however, going to get into a discussion on what exactly a cobbler is – biscuit top, crumble top, pastry top, whatever. This is how I make cobbler, and that’s good enough for me. [...]
It’s always nice to have a special something to welcome your guests. And on a day like Thanksgiving, with lots of family and lots of work and lots of noise and lots of food, it helps if that little something special involves wine. The idea of making sangria with dried fruit and sparkling soda came [...]
I would hazard a guess that the cranberries on the Thanksgiving table are one of the more polarizing dishes. You can’t have Thanksgiving without cranberries, but the divide between sweet and savory, jellied or chunky, canned or homemade is probably the source of mnay under-the-breath comments and drive-to-grandma’s complaints. I have never been a fan [...]
‘Tis the season for all things pumpkin – and it is my favorite time of year. I love pumpkin. Sweet, savory, anyway it comes. I go a little overboard with pumpkin – I buy all the seasonal pumpkin flavored items on the store shelves, and cook with pumpkin like crazy. Check out these cookies, enchiladas, [...]
