I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Swedish Waitress Apple Cake with Vanilla Custard

Swedish Waitress Apple Cake with Vanilla Custard

A recipe developer asks a lot of questions. It’s the best way to learn the secrets of cooking – the little tips and hints and tricks people use, things they learned from mothers, grandmothers and aunts, secrets from fathers, advice from magazines, cookbooks and the back of boxes, or lessons learned from failure. So […]

Chocolate Dutch Baby with Vanilla Roasted Strawberries

Chocolate Dutch Baby with Vanilla Roasted Strawberries

It is hard not to want to eat something called a Dutch Baby. It’s such a sweet and inviting name. The puffy oven pancakes have experienced something of a renaissance in the last few years, with lots of recipes showing up on the internet for sweet and savory versions with all sorts of flavorings and […]

Strawberry Ricotta Cake

It has taken me awhile to realize that ricotta cheese is an incredibly versatile ingredient. For most of my life, I only ever encountered it in lasagna. But years of cooking and research has shown me that it is good for so much more. Now when I say this, I mean good, whole milk […]

Blueberry Vanilla Buttermilk Cake

Blueberry Vanilla Buttermilk Cake

Simple ingredients of the best quality produce the most amazing results.  It always holds true.  Fresh blueberries straight from the farmers’ market, real vanilla and creamy buttermilk, the best you can find.  I mulled over ways to dress up the cake, make it more exotic or unusual, but in the end, I decided there […]

Sweet Grits and Sorghum Peaches

Sweet grits is an idea you occasionally, but rarely, see in old community cookbooks.  The kind that are handwritten and mimeographed, and use measures like “a coffee cupful” and “butter the size of a hen egg.”  Sweet grits are more of concept a people talk about.  You see, grits are one of those dishes […]

Skillet Strawberry Upside Down Cake

In the last few years, I have truly become a seasonal eater.  The rise in popularity of farmers markets has encouraged me in this, because the array of beautiful farm fresh fruits and vegetables is so tempting. And after years of being desensitized by perennially available produce, I have rediscovered just how amazing produce […]

Fig, Bourbon and Vanilla Bean Jam

Canning is a new passion for me.  I’ve had fits and starts about it over the years, lots of failures, lots of time spent making jams or relishes only to forget about them and never use them. But after all that trial and error, I have finally got the knack of it and have had […]

Strawberry Buttermilk Cupcakes with Buttermilk Vanilla Frosting

I love strawberry season.  Not only do I finally get my hands on delicious berries, but it really means the start of delicious farmers market produce.   I only buy strawberries in season.  I know you can get them all year round now, but I don’t like the watery,  hothouse types, or ones flown in […]
