I'm P.C., and I have studied food and cooking around the world, mostly by eating, but also through serious study. Coursework at Le Cordon Bleu London and intensive courses in Morocco, Thailand and France have broadened my culinary skill and palate. But my kitchen of choice is at home, cooking like most people, experimenting with unique but practical ideas.

I live, mostly in my kitchen, in my hometown of Memphis, Tennessee.

Fresh Fig Mousse

Fresh Fig Mousse

I adore figs, and during their short growing season here, I really try to make the most of them. I make jars and jars of Fig, Bourbon and Vanilla Bean Jam. It is one of my signature preserves now, one people always ask me for. My Fresh Fig Cake with Buttermilk Glaze is a summer […]

Fresh Strawberry and Cream Pudding

Fresh Strawberry and Cream Pudding

Watermelon Pie

Summer in the South, the heat, the humidity, is best dealt with by a cool slice of fresh watermelon.  The thwack of a big knife slicing into the thick rind and the slurp as it cuts through the flesh is up there on the list of summer sounds with crickets humming and the sprinkler […]

Peep Mousse

After the international success of my Candy Corn Mousse from Halloween 2009 (yes, international, it was big in Singapore), I have decided to branch out with silly holiday candy desserts.  And so I present Peep Mousse, the more refined way to consume the iconic marshmallow Peep.  In case you were looking for a more […]

Baked Gnocchi with Gorgonzola and Sage Cream

It is such a little bit of magic when something truly easy is also masterfully elegant.  And that is the case with this simple pasta dish.  So few ingredients, only a little fiddling around and you end up with bubbling deliciousness.  Maybe because the ingredients are just a little out […]
